Passion: runny eggs

I love eggs like crazy. Really.

It was one of my cravings when I was pregnant, I daydreamed about it all the time. I had no idea how much I would miss it so much. But I miss them in a particular way, soft-boiled, runny eggs!

I've always loved poached eggs but I've always been so bad at making them. I felt like half of the white was lost in the water and there wasn't much left of my egg. It is also more difficult to handle without it puncturing on the way to the plate.

So it's been several years since I gave up poached eggs for soft-boiled eggs. It's so easy too, impossible to miss!

I could seriously eat it every day. For lunch on toast, for dinner on a salad, in ramen (of course!), on creamy pasta... The list is endless!

At the beginning of my maternity leave, I had made a good quantity of gravlax which I had frozen in portions, in anticipation of the holiday season. Finally, for several days when I got home, my boyfriend and I got up and cooked some soft-boiled eggs, we cut ourselves a few slices of frozen gravlax (it cuts very well and thaws in no time), put bread in toaster and ta-dah! luxury lunch!

It's not much you will say but it motivated us to get out of bed and start the day on a good note.

Sometimes for dinner, when we wanted comfort, it was ramen. I have already given you my famous recipe for miso broth but I am also lazy (I assume myself totally!) sometimes by using quick sachets to make! Just add grilled mushrooms, bok choy, corn with soft-boiled eggs and it's the ultimate comfort food bowl!

Here is how to make these exquisite eggs:

-In a small pot, place the eggs and add cold water just enough to cover. Put the lid on the pot and set the heat to maximum to bring the water to a boil.
-As soon as the big bubbles appear, lift the lid slightly, reduce the heat to half and set for 3 minutes.
-When it's ready, drain and fill the pot with very cold water.
-Wait a bit for the eggs to cool and peel gently. You should have an egg with the white well cooked but the yolk runny.

So much easier to make than a poached egg but with everything we love!
